Yes, an online card is just a virtual card, but you can have more of them for no additional costs compared to regular cards. They also cannot (officially at least) be used for Apple Pay etc., so their main use if for online shops or subscriptions. But you don't have to use them if you don't want to.
The online cards are Mastercards.
A Maestro card is always a debit card, that's correct. Depending on where you're living, your "normal" bank cards might be Maestro cards, too. But yes, they work exactly like that.
For you as a user, both of them work just like debit cards. As soon as you buy something, the amount is booked from your account, never to be seen again (except if you get a refund, or if a hotel/rental car deposit is returned). For the merchant, they are pretty much the same, as they are both Mastercards. But one of them is a "Debit Mastercard", and the Travel Card looks just like a normal Mastercard does. Some merchants might insist on you using a "real" credit card, and in these cases, using the Travel Card might help you. But even with the Travel Card: It does look like a regular credit card to a merchant, but it works like a debit card for you. You don't need to pay monthly and you can't fall into any debt.
By the way: A Maestro card also doesn't have a fixed IBAN number, they have an internal number just like credit cards have. They are usually just not printed on the card itself, as Maestro cards often can't be used for online shopping (this depends on the country, though). The IBAN printed on the card is just for your reference, and you can change the actually associated bank account from the app anytime.
So with bunq, all cards work pretty much the same for you. Just use the one that works best with the shops/merchants that you're shopping at :)
