I think the proposed solution, removing payment methods, doesn't make much sense. Making others give you their money should be made as easy to them as possible. You shouldn't have to care how they pay you.
What the real issue is, is that some payment methods come with a fee which is passed on to you.
A better solution to that problem, would be the option to specify who will absorb that fee when creating the link. Payer, you or shared. Just like with fees for international bank transfers.
If you choose that whoever pays you will have to absorb it, they can then decide whether they'll still use their creditcard, and pay a bit more, or choose an alternative method if they can.
