Guys, there is literally nothing we can do to help. You're most likely using an unofficial service that is not supported on your homecountry. The tips that should help are:
1) set the phone to the right country (depending on how your card was issued) if you are not natively from a ApplePay supported country.
2) add the card MANUALLY from the ApplePay settings in the Settings menu from your iPhone, copy the card number manually, take note of the exp. date, the cvc code.
3) when ApplePay askes you to verify and prompts between the bunq app or SMS: do NOT use the bunq app but use SMS instead.
Those are the tips. If it works you did it right. If it doesn't work there is literally noting we can do for you.
There is one exception: when you're actually living in Spain or Italy then you are entitled to ApplePay. If you keep having problems then contact support via Private Matters.
Note: the above procedure worked for me for this afternoon both a Spanish and Italian card while I'm living in Holland. At the moment Italy still works, for Spain cards there seems to be a problem indeed.
