I have the same issue — very annoying, as I really loved this feature. I’d like to add, however, that for me only some payments get excluded from the spending insights. E.g., I was grocery shopping on Oct 15, paying with my debit card via Apple Pay, and that payment is still missing. On the other hand, one of my subscriptions debited a monthly fee on Oct 21, and this one does show up in my spending insights. 🤷♂️
I did create a ticket on Oct 17, and inquired about its status several times — they say that they are still working on fixing it. 💪
